how to re-whip melted whipped cream?
we bought non fat whipped cream and while we drove home it melted in the back of our truck due to how hot it was outside. it lost its whippy-ness and has a texture more like melted marshmallows [just cold..] since its liquidy we are trying to re-whip it with a hand held blender or whatever..and it isn't working its still liquidy :[ does anyone have any idea how to make it more puffy? [er..more puffy?]
I'm afraid you'll have trouble achieving this, because it's non-fat whipped cream. With regular whipped cream, what keeps the tiny air bubbles inside (giving the whippy-ness) is fat. Really it's down to very specific proteins, but my point is that non-fat whipped cream isn't exactly like regular whipped cream, so cooling it and whipping it won't work as it should.
If you're desperate to make it whippy again, I'd try mixing it with egg whites that have been beaten with some sugar. I'm afraid it's not a very good solution, just a quick fix that will work for whatever amount of time it takes you to eat the whipped cream.
