Should I use the paddle or whisk attachment on my Kitchen-aid Mixer when making cheese cake?

Paddle it is! Thanks...I'll save you all a piece ;)

Use the paddle but be sure not to overmix. Make sure your cream cheese is at room temp or soft or else it will be lumpy. If you get too much air in it it will crack when you bake it.

Also, make sure you place foil around the outside of your springform pan and set it in a jelly roll pan with a 1/2 inch of water (it's called a water bath). This will help it to cook evenly and avoid cracking.
