It surprised the heck out of me to learn, a few years ago, things people cook in their rice cookers, as well as only rice. Sam Choy I heard someone say that when I was in college, he shake the corned beef hash and eggs for the kids in the bedroom. I've heard other stories similar. Once, I went to a meeting and someone brought a delicious rice soup stays hot in warmer. So what to cook, also in rice your rice cooker? Here is something that a friend and I invented a few years ago. I love it. It is our local version of risotto. Risotto, as you know, it is usually arborio rice, cooked on the stove-top, like the chicken broth is added slowly (to not release the rice and make glutins sticky). When large, it is usually creamy and tasty. Our version manages to be creamy, tasty and sticky. There is plenty of room for experimentation, too. Risotto Rice-Pot (a recipe from Valerie and Mitchell) Ingredients: 2 cups medium-grain white rice 2 chicken breasts or thighs 2 regular size cans of chicken broth (no large pieces of fat) 1 large can tomatoes integers (Progresso brand is best) 2 tablespoons shredded Riccota (more or less) 1 small (or large) handful of shredded cheddar cheese (optional, in reality, but used) 1 or 2 tablespoons of tomato paste a few pinches of fresh or dried herbs to taste. I prefer fresh basil and oregano in this recipe, but you can not go wrong with everything you want, really. Fresh black pepper, if you have it. Cooking Instructions: Wash and cook rice, as you would normally. Place the rice in a pot of rice. Add chicken broth. Cut chicken into quarter inch (or so) cubes. Add to the pot of rice. Chop, slice tomatoes, puree, or puree and add to the pot of rice. Valerie does not like thick, so when we do this together, I puree. I prefer my tomatoes roughly chopped. Roughly chop or crush herbs and add to pot rice. Add the tomato paste and stir gently. In fact, I recommend that you use a little tomato paste and decide later if you like the most tomatoey. You can always add the tomato paste before serving and there is no problem. Start rice cooker. When the button is open, let your rice sit, covered, for about twenty minutes. Carefully lift the lid. The drink seems to be too liquidy at first, but basically the liquid substance just resting on top of rice. With a spoon timber, gently stir everything to work the liquid down into the rice. If it is still too wet cap, replace, press the button, and repeat the process. Now that everything is very hot, the button will open a backup in just a few minutes. Let stand for five or ten minutes and stir again. Add ricotta cheese and stir gently. Sprinkle with the black pepper and fresh grated cheddar cheese. Yum! My friend and I usually eaten as a main dish, but some of our like best friends and lateral. My guess is that if you like fried rice as a main dish, you'll like this in the same way.
