Can I stuff my chicken with rice a roni?
Do I cook the rice first and then stuff the chicken? I'm making it in a stand alone roaster (Hamilton Beach roaster). Should I put some chicken broth in the roaster or not? I know the chicken will produce it's own juices. I need to be able to make gravy out of the drippings, too. Would it be best to just make the rice and serve it separately? How long and at what temp. should I set the roaster? Thanks in advance!!
It is not a good idea to stuff the chicken with the rice prior to cooking the chicken. There is a potential for salmonella here in that the rice will soak up the uncooked chicken drippings (and the associated bacteria) and the internal temperature may not get hot enough to kill the bacteria even though everything will appear to be cooked thoroughly.
